Oliver began his brewing career at the traditional Brauerei im Füchschen before earning his Diploma Brew Master degree at the prestigious VLB Brewing School in Berlin, in 2002. His international experience spans breweries in Finland, Russia, France, and Greenland. In 2008, he co-founded Doolally, India's first craft brewery, which has since expanded across Pune and Mumbai. Besides Doolally, Schauf has consulted for numerous Indian beer brands, including Effingut, White Owl, and the Oi Brewing Company.
